Cyclospora and Unwashed Produce: How a Parasite Hitchhikes on Raspberries
Every so often, a summer produce recall makes the news: bagged salad mix, imported raspberries, or fresh basil linked to dozens of cases of severe, watery diarrhea that drags on for weeks. The culprit is often Cyclospora cayetanensis, a single-celled parasite (a coccidian protozoan, related to the organism that causes toxoplasmosis) that is almost impossible to detect by looking at the produce itself.
How the parasite spreads
Cyclospora lives in the human intestine and leaves the body in feces as an oocyst — a tough, thick-walled cell built to survive outside a host. Unlike bacteria such as Salmonella, a freshly shed oocyst is not yet infectious. It has to spend anywhere from days to weeks in the environment — exposed to warmth, moisture, and oxygen — before it sporulates and becomes capable of causing infection. This delay is part of why outbreaks are so hard to trace: contamination can happen at a farm on one continent and cause illness in someone eating the produce weeks later and thousands of miles away.
Produce becomes contaminated when irrigation water, wash water, or handling introduces oocysts onto a crop's surface — commonly through water contaminated with human waste. Raspberries and other soft, bumpy, or leafy produce are especially high risk because their uneven surfaces are difficult to rinse clean, and because they are usually eaten raw with no cooking step to kill the parasite.
Why "just wash it" doesn't fully work
Oocysts are small (about 8-10 micrometers, roughly the size of a red blood cell) and cling tightly to plant surfaces, especially in the folds of a raspberry's drupelets. A quick rinse under the tap removes dirt and loose debris but is not reliable at removing oocysts, and because they resist standard water disinfection (including chlorine at the levels used in produce-wash water), washing alone cannot be counted on to make contaminated produce safe. This is why prevention focuses upstream, on water quality and field sanitation at the farm, rather than on consumer washing at home.
What infection looks like
After ingesting sporulated oocysts, most people develop watery diarrhea within about a week, often with fatigue, cramping, loss of appetite, and weight loss. Without treatment, symptoms can wax and wane for weeks to months, because the parasite reproduces inside intestinal cells in repeating cycles. The standard treatment is a combination antibiotic, trimethoprim-sulfamethoxazole (TMP-SMX), which is effective, but people with a sulfa allergy have fewer good treatment options — another reason prevention matters more than cure.
